taking off

the fermentation had begun around noon today with the liquid layer moving from around the circumference of the mixture to underneath forming a sandwich layer. as it continued to increase its yeast count, you could see the clear developments of a successful and healthy precursor to a starter which will then become "the mother".

several hours later, i noticed that the plastic wrap was starting to rise significantly due to the CO(2)release. you could also see that the structure had now become billowy and cavernous. the bubbles had become much, much larger. a major difference in the matter of several hours.


finally.....success. the seed culture started showing progress late this morning:


tomorrow night is its next feeding. more to follow.

supper was a rice pulao, south indian style. didn't feel like cooking much.
