peanut butter cookies

ok, so this isn't such an original thing to blog about, but .... the idea that a great peanut butter cookie could be made without flour in it was something i had to try. i found this recipe several years ago on the back of a kraft container of peanut butter and have been making it ever since.

3 ingredient peanut butter cookies

ingredients:

1 c smooth peanut butter [258 g]
1/2 c white granulated sugar [100 g]
1 egg

yup, that's it.


method:

preheat oven to 325 F.

mix everything together well and form 24 balls with a heaping teaspoon.


place evenly on an ungreased cookie sheet and then press each ball down with a fork before putting in the oven.


bake for exactly 15 minutes, no longer. remove from oven and let cool enough to transfer to a baking rack to cool.

Mmmmm...another yummy-sounding treat. Hey, is it true that all the calories fall out if you "accidentally" break a few?

hey ostara - i was wondering if there was a way to lower the calories. i will have to try that method ;pp

in spite of the calories, these are one of my faves.

can u believe at certain times (historically), PB was considered "health food"? that's my kinds "vegetable"! oops, i mean legume.

Oops, you posted this two minutes too late to make it to my gluten-free weekly roundup, but I'll include it next week! I make this same recipe, but with some baking powder included.

Yay for gluten-free cookies! If you made these with almond butter or sunflower butter (Sunbutter), they would be Pesach friendly!

michelle - hey there. thanks for stopping by. you know, i didn't even know there was such a thing as sunflower butter! it does make perfect sense though. and you're right they would be perfect for pesach. never even thought of that! thanks. (now i have to remember!) :)

I'm on a roll this week. Made your eggless choclate cake and now these easy ,yummy cookies. Do you by any chance have recipes using Nutella as a main ingredient.

hi archana - glad to hear you've been trying out different things. it makes the work i put into the blog worthwhile. i like how easy these cookies are to make. at first, i didn't think they'd work because of the absence of flour but they work very nicely.

didn't realize you ate or cooked with eggs (i assumed you didn't because of the chocolate cake).

as for nutella recipes, i know i have something somewhere; i'll let you know over the next few days. check back here or email me.

it was really really really good.
i have to get better of actually taking pictures of the finished product. i told myself that i didn't need to document the process because you did...but i should have at least taken a picture of somebody eating them :-)

they were excellent tho I had to protect it from mom adding flour ... even a teaspoon :-)

and yes, chennette (and even other sister) got some!

lilandra - glad to hear they went over well. when i first made them i was skeptical because there wasn't any flour .... i thought it was a typo on the recipe but as it turns out, they work!

lol about making sure your mom didn't add any flour.

and yes! pictures!! guess you'll have to make another batch ;p LOL.
