lemon slice sunny day sugar cookies
these cookies are very easy to make and are like regular sugar cookies, only they are cut in half and rolled in brightly coloured sugar. their texture is softer than the standard sugar cookie [at least the ones i know]. note that you need to make sure you press the sugar in well and cut them in 1/4" slices, no thinner.
makes about 48 cookies [i never count!]
ingredients:
2 c all-purpose flour
1 1/4 c powdered sugar
3/4 c unsalted butter, softened
1 egg
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 tsp freshly grated orange peel
2 tsp lemon extract, not juice [don't omit]
sugar ingredients:
1/4 c sugar
4 drops yellow food color
2 drops red food color
method:
sift dry ingredients together to eliminate lumps and distribute evenly. combine all remaining ingredients in large bowl. beat at low speed. scrape bowl often, until well mixed.
divide dough in half. shape each half into a 6 x 1 1/2 inch log. wrap in plastic wrap. refrigerate until firm [at least 2 hrs].
combine sugar and yellow food color in jar with lid. cover and shake until well mixed [about 1 to 2 minutes]. remove 2 tbsp sugar; add red food color to remaining sugar. cover; shake until well mixed.
heat oven to 375°F.
cut logs in half lengthwise with sharp knife. roll 2 halves in yellow sugar and 2 halves in orange sugar.
cut into 1/4-inch slices. place 1 inch apart onto ungreased cookie sheets. bake for 8 to 10 minutes or til edges are lightly browned.
Lemon is like the next best thing after chocolate.

hey lilandra - welcome! sarina is right, lemon extract is the same as what you call lemon essence. it is oily and is used only in baked goods to add a lemon flavour.

ReplyDeletelilandra - a bureka is a kind of very popular (jewish) snack food which is shaped like a spanish empanada only they are typically very small and filled with either cheese or vegetable mixtures like potatoes or eggplant. it falls into things i love to eat!

lilandra - yes, they can be filled with feta and spinach also but often (mashed) potato is involved to make it less "watery". i love the pure cheese ones the most. re the picture, yes i changed it. other one was too dark for my liking.

ReplyDeletecoffee - hehe, it's called obsessed. yes, the extract is the same thing to use in it. R- you call it essences, i think, in your part of the world. it's like kewra essence only it comes in a whole bunch of different flavours. hey, kewra may be an idea for a variation with the coconut! :P
